You can keep editing a published product. The difference is that edits now reach people who have already bought it, so treat changes with more care than you would in draft.

Check it as a client before publishing, not after. Fixing a typo is fine; restructuring a programme that people are already working through is not.
If you need a significant rework, build a new product rather than rewriting a live one. Existing buyers keep what they paid for.
